If you’ve ever been to an Indian wedding or Garba, you’ve probably noticed that we are all about the bright, vibrant colors! In fact, we even have a festival called Holi entirely dedicated to colors. People come together to sing, dance, and bombard their friends and family in a colorful flurry. I had the opportunity to play Holi in India twice and it was truly an unbeatable experience. Along with the colorful celebration, it’s a great day to share delicious food with your favorite people. These Samosa Phyllo Cups are a great way to bring that color to your Holi party spread!

Modern Twist On Samosa Chaat

Imagine this: delicious samosa chaat minus the mess that goes along with it! The perfect thing about these bite-sized Phyllo Cups is that they’re VERY easy to assemble and are a mess-free, easy-serve appetizer. This recipe makes 20 Phyllo Cups so you can scale the ingredients as necessary for your party size. I can assure you these will be a hit with your family and friends so you may want to make some extra just in case!

6 Samosas (I use the Deep Frozen ones from Instacart)

Phyllo Shells (I use these Athenos Phyllo Shells that can be found in the freezer section)

Cream Cheese or Yogurt

Chopped Veggies of your choice

Make It Healthier

This recipe is already pretty healthy and light, but here are two swaps you can make it make it more macro friendly!

  • To reduce oil, use a frozen samosa and air fry or bake it instead of using fresh fried samosa.
  • For a lower fat option, usse a Nonfat Greek Yogurt instead of Cream Cheese

Homemade Mint Chutney

An essential ingredient in this flavor-packed recipe is the delicious chutney. Mint chutney is really easy to make at home and enhances EVERYTHING you add it to. Here’s what you’ll need:

  • 1 Part fresh cilantro
  • 1 Part fresh mint
  • Green Chilies, to taste
  • Lemon juice
  • Garlic
  • Cumin, Salt
  • Yogurt (optional)

All you have to do is throw everything except the yogurt into the blender, add 1 tbsp of water at a time until everything starts breaking down. Once your herbs are all broken down, add some yogurt until you achieve your preferred creaminess! This chutney is great on so many things and is one of my favorite toppings/ingredients in many recipes!

Mini Samosa Chaat Cups Appetizer

Ingredients

Scale
  • 20 Phyllo Shells
  • 6 Samosas (baked or airfried)
  • 1 bell pepper, finely chopped
  • 1 tomato, deseeded and finely chopped
  • 1/2 red onion, finely chopped
  • 12 green chilies, finely chopped
  • 1 tsp chaat masala
  • 1/4 cup Cream Cheese or Yogurt
  • 3 tbsp chutney
  • 1/2 cup greek yogurt or dahi
  • 2 tbsp sev, boondhi or something crunchy
  • Chopped Cilantro
  • Sriracha or Spicy Ketchup

Instructions

PREPARATION If you are using Frozen samosas, cook according to the package instructions. If using ready-to-eat samosas, microwave for 30 seconds. Divide the chopped veggies into two halves. Half the veggies will go in the samosa filling and half of them will be used for garnish.

FILLING In a bowl, smash your samosas down into a soft potato mixture. Add half of the bell pepper, tomato and onion. Add in the green chilies, chaat masala, cream cheese or greek yogurt and chutney. Stir to incorporate everything.

SWEET DAHI In a bowl, mix the 1/2 cup of greek yogurt or dahi with a pinch of sugar.

ASSEMBLE Arrange the phyllo shells on a platter. Spoon a little less than 1 tablespoon of filling into each phyllo shell and press down gently without breaking the shell. Drizzle the sweet dahi and sprinkle on the second half of the chopped veggies. Garnish with sev/boondhi, chopped cilantro and sriracha.
