Chunky Guacamole vs. Boring Guacamole

I don’t know about you, but I’m a sucker for good, chunky guacamole filled with flavor and texture. In fact, I’m willing to pay the extra $3 at chipotle just to get guac on my bowl (that’s like a third of the price of the actual bowl). Imagine my surprise when I found out you could get a pack of avocados and make a HUGE bowl of guacamole for the same price. Either way, it is so delicious and has made an appearance at every taco night, nacho night and sometimes at breakfast since!

What’s So Special About It?

The recipe is pretty simple, the only real notable ingredient is that you must use Hass avocados not just any old avocados to achieve that perfectly buttery smooth texture. Also, don’t add the tomatoes! It’s got seven standard ingredients: avocados, lime juice, tomato, cilantro, red onion, jalapeño, and salt.

How Do I Keep My Chunky Guacamole From Turning Brown?

Guac usually turns brown because avocados have an enzyme called polyphenol oxidase which reacts with the oxygen in the air and turns brown. The easiest, more inexpensive way to prevent your guac from turning brown is:

  1. Add your guacamole to an airtight bowl and flatten it out with a spoon.
  2. Pour about half an inch of water over the guac, covering the entire top of the guac.
  3. Close the lid tightly and store for up to 2-3 days.

In my opinion, it’s not so much what goes into the guac but the exact proportions of each ingredient. Too much onion and the guac gets unpleasant, too little salt and the guac tastes bland, etc., After quite a few trials, this is what the perfect proportions came down to for the best guacamole

Ingredients

Scale
  • 3 Hass Avocados
  • 1/2 lime, squeezed
  • 1 small red onion, chopped
  • 1/2 tomato, remove seeds and finely chopped
  • 1 small handful cilantro, chopped
  • 1 jalapeno, chopped finely
  • salt to taste

Instructions

Add everything to a bowl and mash with a fork until you get your desired texture
