Creamy Mascarpone Garlic Fettuccine

Looking for a 15 minute weeknight dinner? Make this simple dish of fettuccine pasta tossed in a light, creamy sauce made of mascarpone cheese, fresh garlic and herbs.

What You Need To Make This Recipe

  • Creamy Mascarpone Cheese: this is the key to a super creamy base for the sauce. A little goes a lonnnggg way.
  • Milk: a splash of milk will loosen up the mascarpone cheese and make the sauce easier to coat the pasta.
  • A Pat of Butter: for sautéing the garlic and releasing that delicious aroma!
  • Fettuccine Pasta: any sort of long pasta shape like fettuccine or spaghetti is ideal for a light sauce like this one.
  • Garlic Cloves: freshly minced garlic will elevate the flavor of this sauce to the next level!

Got leftover mascarpone cheese?

If you’ve never had mascarpone cheese before, it’s sort of like a cream cheese, but much creamier. This creaminess is what makes it the perfect base for a pasta sauce. But most popularly, mascarpone cheese is known for its role in tiramisu. Try my Eggless Tiramisu recipe with your leftover mascarpone & you’ll be set for dinner & dessert!

  • Yield: 2 Bowls 1x

Description

Looking for a 15 minute weeknight dinner? Make this simple dish of fettuccine pasta tossed in a light, creamy sauce made of mascarpone cheese, fresh garlic and herbs.

Ingredients

Scale
  • 4 oz fettuccine pasta
  • 2 tbsp mascarpone cheese
  • 1 tbsp butter
  • 3 cloves garlic, minced or grated
  • 2 tbsp milk
  • fresh basil, thinly sliced
  • salt
  • pepper

Instructions

  1. Cook the Pasta : Bring a pot of water to boil and add some salt. Stir well and add the fettuccine pasta. Cook to al dente.
  2. Make the Sauce : The trick to a quick dinner is multitasking. While the pasta boils, it’s time to make the sauce. Melt the butter and add the minced garlic. Sauté for 1-2 minutes or until fragrant. Add the mascarpone cheese and milk, use a spatula to break the mascarpone clumps. Bring to a simmer and add the basil, salt and pepper.
  3. Marry the Flavors : Set aside 1 cup of the pasta water and drain the remaining pasta. Add the drained fettuccine to the sauce and stir will to combine. If the sauce is too liquidy, cook on low until it thickens. If it gets too thick, add a splash of pasta water and stir well. Adjust the salt and pepper to your liking and enjoy!
