Airfryer Baby Corn

Unlike baby carrots, baby corn is not living a lie.

It was only after I started sharing recipes on the internet, that I realized how uncommon some of the foods I had grown up eating were. Although I was brought up in America, most of my diet was primarily rooted in Indian Cuisine until I reached high school. While my friends were eating their grilled corn on the cob, my mom made us baby corn capsicum curry. One of these days I’ll have to get that recipe from her to share! Baby corn is a vegetable that I’m pretty familiar with but isn’t very widely available in the United States.

When I stumbled upon fresh baby corn in the produce aisle at Trader Joes, I was ecstatic! Baby corn is a very unique vegetable, to say the least. Unlike baby carrots, baby corn is not a lie. Baby corn is essentially a crop of corn that is harvested before it reaches maturity. They are satisfyingly crunchy and subtly sweet. Compared to regular corn, baby corn is lower in calories, lower in carbs and lower in fat. Unfortunately, it’s not widely found in the US because it is a very labor-intensive crop. If any interested in getting your hands on some, you can try the fresh ones at Trader Joes or find them canned in most grocery stores!

Traditionally, baby corn plays a central role in East Asian and South Asian cooking. They’re used in curries, stir fries, noodles and subzi. Contrary to these more complex dishes, this recipe is both quick and extremely simple! You can also play around with the seasonings to put your own spin on the recipe.

The Final Touch

When serving the baby corn, I love to add some garnishes to complete the experience. I love to do a drizzle of ranch or chipotle mayo! Another combo that I adore is piling the corn with some cotija cheese, cilantro and a drizzle of creamy salsa verde or chipotle crema.

Crispy Airfryer Baby Corn Recipe

Description

Easy, Healthy Crispy Baby Corn coated in a custom blend of seasonings!


Ingredients

Scale
  • 16 Baby Corn
  • 1 tbsp Olive Oil
  • ½ teaspoon paprika
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 teaspoon oregano
  • ⅛ teaspoon black pepper

 


Instructions

  1. In a bowl, drizzle the olive oil and baby corn. Toss to cost. Then, sprinkle on all the seasoning and toss again
  2. Airfry at 375F for 15 minutes, shaking the basket or tray halfway through.
  3. For Serving, drizzle on some ranch or chipotle mayo!
