What is an Achari Paneer Kati Roll?

So, before we get into the “achari” part of this recipe, a paneer kati roll is a super popular street food in Indian that’s basically just a wrap with a spiced filling along with onions, chutney, and sauce. There’s all kind of kati rolls like egg kati rolls, chicken kati rolls and… like this recipe paper kati rolls. I’ve always loved a good paneer knit roll recipe in my rotation so I wanted that to be the first kati roll recipe on my blog but in the future I’ll definitely post a chicken one as well.

Now, the achari part refers to pickle style spices that give this specific chair paneer filling a bit of a tangy, spicy and sharp flavor profile that really wakes all those flavors right up. It used to be one of my favourite snacks to grab at the mall when I lived in India and it’s perfect for when you’re an Indian street food, a vegetarian kati roll or just something that’s handheld and satisfying.

Ingredients You’ll Need (Nothing Complicated!)

Before you look at this ingredient list and run, don’t worry this is actually a very simple paneer recipes and uses ingredients that are pretty standard for Indians dishes. It’s great for if you want a beginner friendly paneer recipe 🙂

  • Greek Yogurt or Sour Cream
  • A block of paneer (any Indian store will have it and these days even mainstream ones!)
  • Chopped red onion, jalapeños and bell peppers
  • Green Chutney
  • Standard spices like turmeric, red chili powder, coriander, garam masala
  • 2 spoonfuls of your favorite Indian pickle
  • Roti, paratha or whatever you want to wrap with!

How to Make Achari Paneer Kati Rolls (Step-by-Step)

Step One : Marinate the Achari Paneer

We’re going to start by making a marinade with the greek yogurt, sour cream, spices and 2 spoonfuls of your favorite pickle. Add in the cubed paneer, sliced red onion & sliced bell pepper and let that sit for a few minutes.

Step Two : Cook the filling

I like to start by adding mustard seeds & cumin seeds to a bit of oil to start. Then, I add in that marinated paneer we just made and cook it up for 5-10 minutes until everything is cooked through.

Step Three : Assemble the Wraps

Now just warm your roti or paratha on a pan, spread on the chutney and spoon the paneer filling and roll it up tightly. You’ve got a full paneer dinner in under 20 minutes!

Tips to Make the Restaurant Style Paneer Kati Rolls

Making this recipe is super simple, so don’t overcomplicate it. Here’s my go-to tips for a first timer:

  • Don’t overcook your paneer! You want to keep it soft, the goal with this style filling is not to get them crispy just slightly charred.
  • Use high heat when cooking the filling. For most Indian dishes, I’ll say go low and slow but this one is an exception. Keep the heat medium-high to cook it up quick and easy.
  • Assemble everything while it’s nice and warm. Even if you make your filling ahead of time, make sure to heat it up before you assemble your rolls and I like to heat it up for a few seconds after rolling as well.
  • Serve your paneer kati rolls with some pickled onion and extra green chutney on the side!

Variations & Substitutions

The best part of this recipe is it’s so easy to swap out ingredients and make this with whatever you’ve got sitting at home.

  • No paneer? You can swap it in for some extra firm tofu, halloumi or chicken.
  • No pickle? This one’s a little harder, but you can swap it in for achari masala that you’ll find at any Indian grocery store.
  • Gluten free? Swap the roti for a gluten-free wrap.
  • Want to make it a bit healthier? Use a whole wheat roti instead of a paratha and use less oil. You could also opt for a low fat paneer.

Ingredients

Scale

For the achari paneer filling

  • ½ cup Greek yogurt or sour cream
  • Pinch of turmeric
  • 4 tsp red chili powder
  • ½ tsp ground coriander
  • 2½ tsp garam masala
  • 2 tbsp Indian pickle of choice (achaar)
  • 1 tbsp minced ginger & garlic
  • ½ tsp salt
  • 1 block paneer, cubed
  • 1 red onion, thinly sliced
  • 1 jalapeño, diced
  • 1 bell pepper, thinly sliced

For cooking & assembling

  • ½ tsp mustard seeds (optional)
  • ½ tsp cumin seeds (optional)
  • Oil, as needed
  • Green chutney
  • Paratha or roti

Instructions

1. Make the marinade : In a large bowl, mix the Greek yogurt, turmeric, red chili powder, ground coriander, garam masala, minced ginger and garlic, salt, and the pickle. This is where all that tangy, spicy achari paneer flavor comes from.

2. Add the cubed paneer, sliced onion, bell pepper, and jalapeño to the bowl. Toss until everything is well coated. Set aside while you heat the pan.

3. Cook the paneer filling : Heat a pan over medium heat with a little oil. If using, add the cumin seeds and mustard seeds and stir constantly for a few seconds until fragrant — don’t let them burn!! Add the marinated paneer and vegetables to the pan and sauté for 5–10 minutes, until the paneer is heated through and the veggies are slightly softened but still have some bite.

4. Assemble the rolls : Warm your paratha or roti until soft and pliable. Spread a layer of green chutney down the center, spoon in the achari paneer filling, and roll tightly into a paneer kati roll.

5. Place the rolls back on the pan and cook for a few minutes on each side until lightly golden and crisp. Slice and serve hot!!
