Why This Recipe Works

The magic lies in the layers of flavor. By roasting garlic until caramelized and infusing the potatoes with fresh thyme and herbaceous notes, you create a deeper savory base. Add in the Montchevre Garlic & Herb Goat Cheese for a creamy, slightly tangy twist, and you’ve got mashed potatoes that are next-level delicious.

With perfectly roasted garlic, buttery creaminess, and the tangy bite of goat cheese, this recipe is proof that mashed potatoes don’t have to be boring. Let’s dive into this comforting dish that’s easy to make yet indulgent enough for any occasion.

Ingredients You’ll Need

  • 10 medium yellow or red potatoes (peeled or unpeeled)
  • A few sprigs of fresh thyme
  • 1 head of garlic
  • 3 tablespoons olive oil
  • Salt (lots!)
  • Black pepper
  • 1 4-ounce log Montchevre Garlic & Herb Goat Cheese
  • 2-3 tablespoons butter
  • 2-3 tablespoons cream
  • Finely diced chives for garnish

Tips for Perfect Mashed Potatoes

🌟 Seasoning the Water
Flavor starts early! Always begin with cold water and add plenty of salt, fresh herbs, and roasted garlic. This step infuses the potatoes with subtle, savory notes from the inside out. Bland mashed potatoes? Never again.

🥔 Choose the Right Potatoes
Yellow or red potatoes are your best bet for creamy, flavorful mashed potatoes. Decide whether you want to keep the skins on for a rustic vibe or peel them for a smoother finish.

🧀 The Creamy Additions
For next-level richness, incorporate Montchevre Garlic & Herb Goat Cheese, a splash of cream, and a little butter. Heat these ingredients together with a few sprigs of thyme or your favorite herbs to create a luxurious sauce that mixes perfectly with the potatoes. Remember, don’t mix cold ingredients with hot potatoes—it can mess with the texture.

🔨 Mash Like a Pro
Skip the electric mixer! Instead, use a ground meat masher or a classic potato masher to achieve that ideal balance between creamy and slightly chunky. Cooling the potatoes to room temperature before mashing prevents gumminess, ensuring a fluffy result.

  • 1 4-ounce log Montchevre Garlic & Herb Goat Cheese
  • 2–3 tablespoons butter
  • 2–3 tablespoons cream
  • Finely diced chives to garnish

Instructions

  1. Roast the garlic: Preheat the oven to 375°F, trim the tops off of the garlic heads to expose the cloves, place them exposed side up in a pan and coat with salt, pepper and 3 tablespoons of olive oil. Cover with foil and roast for 40 minutes.
  2. Once it cools, grab 5 roasted garlic cloves for this recipe and save the rest for something else.
  3. To a pot of cold water, add lots of salt, some sprigs of herbs and roasted garlic. Add some chopped potatoes to the bowl and bring it to a boil. Boil until soft and strain. Save the garlic and herbs.
