To me, bruschetta is the ultimate summertime appetiser. The ripe, in-season tomatoes, chopped dried onion, fresh basil and balsamic vinegar are the perfect refreshing combination. Paired with the grated garlic and light seasoning, it’s super fresh and delicious. Spoon it over some crostini and enjoy!

- Quality Matters: Since we are not using very many ingredients, you will be able to really taste the individual ingredients with every bite. This is why you should use the freshest ingredients possible. Use ripe tomatoes, fresh basil, high-quality olive oil and balsamic vinegar. This way you can ensure that every ingredient really pops.
- Grate the Garlic: Many times, when I say mince the garlic, I see people adding some pretty large chunks of garlic to the food. Nobody likes biting into. large chunk of garlic when they’re trying to enjoy appetizers. To make sure that the garlic is subtle and evenly spread, I like to grate it instead.
- Make the Tomato Mixture Ahead: If you make the tomato mixture ahead of time and let it sit for a few hours, the flavors will have more time to marry together. The tomatoes will give off extra juice as they marinate but that is actually a plus. You can just use a slotted spoon to lift out the bruschetta topping to put on the bread. The extra juices can then be served separately so people can dip into it with extra bread. Serve it over the crostini right before serving!

I’m all for giving tiktok food trends a chance, so when I heard about the healthy coke made with balsamic vinegar and soda I was intrigued. After trying it a few times, with different soda flavours, my verdict is that it’s not as gross as it sounds – in fact, it’s actually refreshing. BUT it tastes nothing like coke. It tastes more like kombucha than anything else.

Ingredients
Tomato Mixture
- 4 Medium Roma Tomatoes, finely chopped
- 1 Garlic Clove, grated or finally minced
- 1/4 red onion, finely chopped
- 5–6 Basil leaves, thinly sliced
- 2 tsp balsamic glaze, or balsamic vinegar (I prefer the glaze)
- 1 tbsp olive oil
- Salt & Pepper, to taste
- 1/2 tsp Italian seasoning
For Serving
- 1/3 of a regular sized baguette, thinly sliced (8 Slices)
- 1 tsp olive oil
Instructions
- In a bowl, mix together all the tomato mixture ingredients. Taste the mixture and add more salt to your preference. Let this mixture sit for 30 minutes to allow all the flavours to marinate together.
- Meanwhile, make the crostini : Preheat your oven to 450 F. Thinly slice the baguette into approximately 8 slices. Brush on some olive oil and sprinkle with a little bit of salt and Italian seasoning. Adding the seasoning before baking allows you to build flavor at each layer of the bruschetta. Place on a baking sheet and bake for 5-7 minutes.
- Right before serving, place your crostini on a platter and top with a large spoonful of the tomato mixture. Optionally, drizzle on some balsamic glaze and top it with shredded parmesan!
