Hyderabadi Paneer Dum Biryani

It’s a well known fact that my favorite food is biryani, but when my mom turned vegetarian, she found a way to bring the flavors of a hyderabadi chicken dum biryani to an equally rivaling vegetarian Paneer Dum Biryani that’s super beginner friendly.

Why you’ll love this recipe

  • It’s very beginner-friendly. If you can boil rice and set a timer, you’ve got this. No special technique, no fancy equipment… just a pot, some foil, and a lid.
  • It’s also bachelor friendly! Make a big batch and tastes even better as leftovers. It serves about 6, so it’s great for feeding people — and somehow it tastes even better the next day.
  • Vegetarian without feeling like a compromise. The paneer soaks up the marinade and carries all the deep, spiced flavor you’d expect from a chicken biryani.
  • It’s a forgiving recipe. Taste as you go, adjust the salt and heat to your liking. It’s the kind of recipe that bends to you instead of the other way around.

This recipe serves about 6, so it’s perfect for feeding a crowd or, more realistically, for leftovers that taste even better the next day.

A few notes before you start

My mom never measures anything, so getting these quantities out of her was its own small victory. Three things she’d want me to tell you:

  • Trust your tongue more than the numbers. As you’re adding your spices and salt taste and if something feels too less just add more !
  • Don’t be too involved with the dum. When the pot is sealed and resting, leave it alone. Opening it to check is how you lose all the steam that’s doing the actual work and actually sets you back.
  • Store-bought fried onions (the crispy kind in a bag) are not cheating. My mom uses them and so should you.

Serving it the way we do

We eat this with a simple raita made with just yogurt, a little salt, and chopped onion (and sometimes tomato)  to balance the heat. A wedge of lemon and some sliced red onions on the side never hurts. The highest compliment this dish will get in your house is silence at the table, because everyone’s too busy going back for seconds.

If you make it, I hope it brings a little of my mom’s kitchen into yours!

Hyderabadi Paneer Dum Biryani Recipe (Easy & Vegetarian)

  • Author: eatsbyramya
  • Total Time: 1 hour
  • Yield: 6

Description

Learn to make restaurant-style paneer dum biryani at home. Easy sealed-pot method, bold spices, and tender paneer makes this a foolproof vegetarian recipe that tastes even better the next day!

Ingredients

Scale

For the marinade

  • 3 cups paneer, cubed (1 standard packet)
  • ½ bunch cilantro
  • ½ bunch mint leaves
  • 3 tsp kasuri methi
  • ½ cinnamon stick
  • 2 cardamom
  • 2 cloves
  • Pinch of chaat masala
  • 3 bay leaves
  • ½ tsp black jeera (optional, but recommended)
  • 1 tsp cumin powder
  • 2 tsp coriander powder
  • 3–4 tsp red chili powder, or more to taste
  • ½ tsp curry powder
  • ½ tsp turmeric
  • ½ cup curd (or plain yogurt)
  • 1 lemon, squeezed
  • 1–2 tsp salt
  • 1 tbsp ginger garlic paste
  • 1 tbsp oil
  • ¼ cup fried onions (store-bought is easiest!)

For the biryani

  • 3 cups uncooked white rice
  • 2–3 cardamom
  • 1–2 bay leaves
  • ½ inch cinnamon stick
  • 1–2 spoonfuls of salt
  • ½ bunch cilantro, finely chopped
  • ½ bunch mint leaves, finely chopped
  • ¼ cup fried onions (store-bought is easiest!)

Instructions

  1. Soak the rice: Add the uncooked rice to a bowl, fill it with water, and let it soak for an hour.
  2. Marinate the paneer: While you wait, add the paneer to a bowl with everything in the marinade section. Mix well and taste. You might ned to add more alt or red chili powder based on your preference. Let it sit for at least 30 minutes.
  3. Build the broth: After the 30 minutes, bring a pot of water to a boil with the cardamom, bay leaf, cinnamon stick, and salt. The water should taste saltier than you’d want the final biryani to be. Boil for 4–5 minutes to get it really flavorful.
  4. Par-cook the rice: Strain your soaked rice and add it to the boiling water. Boil for about 10 minutes, or until the rice is 80% cooked. Don’t cook it all the way because it’ll finish cooking in the dum & you don’t want it to get mushy. When it’s done, scoop out a cup of that cooking water to save, then strain the rice.
  5. Start the layers: Pick a wide pot with a lid for assembling. Add ¼ cup of the saved rice water to the pot along with the marinated paneer, and mix. Spread it into a flat, even layer with a spatula.
  6. Layer and seal: Add the strained rice on top and spread it out without mixing the layers. Pour in another spoonful of that saved rice water. Top with the chopped cilantro, mint, and fried onions. Cover the pot tightly with aluminum foil, then place the lid securely on top so no air can escape. This is the dum part.
  7. Cook and rest. Cook on high heat for 5 minutes, then reduce to low and cook another 10 minutes. Turn off the heat and do not open the pot. Let it sit, untouched, for another 10 minutes. Then it’s ready! Mix well before serving

  1. This was so easy to make and was absolutely HEAVENLY! I loved that it needed the least number of steps and monitoring. Thanks to Ramya and Ramya’s mom for sharing a no-fuss delicious recipe!

My only mistake was the parboiling time. I think I did it longer than the 80% you mentioned because by the time the dum was done my rice lost its basmati structure. I’ll manage that better next time…
