Description
These SUPER SIMPLE decadent Almond Barfi Croissants are filled with an almond fudge filling, made with a cardamom, ghee and almond flour.
Ingredients

- 8 store bought croissants
For the Syrup
- 1/2 cup water
- ¼ cup granulated sugar
- Pinch of saffron
For the Almond Paste
- 1 cup almond flour
- 1/2 cup brown sugar
- ½–1 tsp ground cardamom (or 4–5 elachi crushed)
- 2 tsp almond extract
- 1 tsp vanilla extract
- ⅛ tsp salt
- 1 egg
- 6 tbsp ghee (or room temp butter)
For the Topping
- Sliced almonds
- Sliced pistachos
- Rose petals (optional)
- Powdered Sugar
Instructions
- Make the syrup by melting the sugar and water on the stove. Add in crushed up saffron, mix and let it while you make paste.
- To make the almond paste, mix together the almond flour, brown sugar, ground cardamom, vanilla extract, almond extract, an egg and ghee (or butter). Mix it up to for a thick paste.
- Preheat your oven to 350 F & slice your croissants in half. Very generously spread the saffron syrup one side of the open croissant (should be no dry corner).
- Spread 2 tbsp almond paste on each open croissant and close it. Add 1 tbsp on top of croissant and top with sliced pistachios and almond.
- BAKE FOR 15 minutes at 350F, dust with powdered sugar and enjoy!!
