One-Pot Lemon Garlic Spaghetti

This Lemon Garlic Spaghetti is a refreshing pasta dish made with delicious spaghetti tossed in a spicy lemon garlic sauce, herbs, breadcrumbs and fresh parmesan. This meal delivers a luxurious flavor with very minimal effort (seriously, like less than 15 minutes!)

This Lemon Garlic Spaghetti had been one of my favorite quick & healthy meals since I was in high school. I mean it literally takes 15 minutes to whip up and you don’t even really have to cook. The best part is that it delivers such a bold and satisfying flavor that nobody ever has to know! Whenever I eat this spaghetti, I imagine myself in one of those expensive Italian restaurants because, for some reason, this spaghetti makes me feel super fancy!

GRAB THE INGREDIENTS

A solid pantry pasta calls for ingredients that are typically shelf-stable or super common. This Lemon Garlic Spaghetti is the ultimate pantry pasta with less than ten ingredients! All you need is:

  • Spaghetti Noodles
  • Extra Virgin Olive Oil
  • Fresh Garlic Cloves
  • Dried Red Chili Flakes
  • Dried Parsley Flakes
  • Fresh Lemon Juice
  • Grated Parmesan Cheese
  • Panko Breadcrumbs
  • Fresh Basil (totally optional!)
MY RULE OF THUMB

When a recipe only calls for a few ingredients, always make sure you’re using high-quality ingredients. For this recipe, choose a good-quality grated parmesan cheese or freshly grate it off the block. Also, make sure to use the best olive oil you can get your hands on! For pretty much all the other ingredients, the quality doesn’t matter too much.

MAKE IT VEGAN

Most of the ingredients in this recipe are already vegan! The only ingredient you need to swap out is parmesan. You can use a sprinkle of nutritional yeast, that will change the flavor but it’s still yummy!

MY FAVORITE VARIATIONS

This recipe is very delicious as is! But as a home chef, I understand the need to constantly change things up. So, if you’ve already made this a couple of times, you could try out one of these variations. To make it higher in protein, add chopped up chicken sausage, baked tofu or crispy chickpeas. You can also bulk it up by adding roasted veggies, cherry tomatoes or thinly sliced kale.

Ingredients

Scale
  • 4 oz Dry Spaghetti
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tsp red chili flakes (or to taste)
  • 1/4 cup grated parmesan cheese
  • 23 tbsp dried parsley
  • 2 tbsp panko breadcrumbs
  • 45 garlic cloves
  • Handful of fresh basil, thinly sliced (optional)
  • Pinch of salt

Instructions

  1. Bring water to a boil in a pot. Add spaghetti and cook as instructed on the package. While the spaghetti cooks, move on to the next step.
  2. Use the back of a knife or spoon to smash each clove of garlic until it slightly splits. Add it to a small bowl with dried parsley, lemon juice, red chili flakes and a big pinch of salt.
  3. Heat the olive oil in a small saucepan until hot. Pour over the garlic cloves and chili flakes. Let it sit while the spaghetti finishes cooking.
  4. Drain the spaghetti and pour it into a bowl. Drizzle the olive oil mixture over the spaghetti and mix until combined. Add the breadcrumbs, parmesan and chopped basil. Toss until well combined.
